If I buy an unlocked LG chocolate phone (KG800), can I use all of T-mobiles phone services w/out any problems?

Out of the box you will be able to make and recieve calls, send sms text and recieve sms text simply by popping in your t-mobile sim card into the KG800
If you want to to use the phone for anything that has to do with the internet, then you will have to manually enter in the T-Mobile USA wap/GPRS settings. Just make sure that you can manually enter the settings with that phone and you will be good to go
